// SUMMARY

A bodega-meets-griddle house sauce: balanced, punchy, a little sweet, and slightly acidic. It is designed to glue beef, cheese, and bun together without tasting fancy.

// INGREDIENTS

SRV :: 8
120 g full-fat mayonnaise (classic deli style)
2 tbsp ketchup
1 tbsp yellow mustard
2 tsp finely chopped dill pickles or relish
1 tsp pickle brine
0.5 tsp white sugar
0.5 tsp smoked paprika
0.25 tsp garlic powder
0.25 tsp onion powder
— Freshly ground black pepper, to taste

// METHOD

    Mix all ingredients thoroughly until uniform.

    Cover and rest in the fridge for at least 30 minutes (overnight is best) so the flavors meld.

// NOTES

  • — Use a thin layer on both the top and bottom bun; the sauce should disappear into the burger, not sit on top.
  • — If you taste the sauce separately while eating, you used too much.
