A bodega-meets-griddle house sauce: balanced, punchy, a little sweet, and slightly acidic. It is designed to glue beef, cheese, and bun together without tasting fancy.

| 2 | tsp | finely chopped dill pickles or relish |

| 0.5 | tsp | smoked paprika |
| 0.25 | tsp | garlic powder |
| 0.25 | tsp | onion powder |

Cover and rest in the fridge for at least 30 minutes (overnight is best) so the flavors meld.
