// SUMMARY

A blistered flatbread where the sauce is a butter: cooked mussels and fire-blackened chillies blended into softened butter with lime and a little of the mussel liquor, spread thick on the dough and baked until it bubbles into the crust. No cheese, no tomato — the mussel butter is the whole point. Needs the Universal Flatbread Dough started two days ahead.

1 kg fresh mussels
0.5 small fennel bulb, very finely diced
1 shallot, finely diced
1 celery stalk, finely diced
3 garlic cloves, sliced
1 handful parsley stems (from ~½ bunch)
5 sprigs thyme
225 ml dry white wine
2 tbsp olive oil
— Salt
— White pepper
250 g unsalted butter, softened
120 g cooked mussel meat (from above)
2 long red chillies
1 garlic clove
1 tsp finely grated lime zest
2 tbsp reserved mussel cooking liquor
— Salt, to taste
4 balls flatbread dough, ~225 g each, tempered
— Flaky sea salt
— Flour or semolina, for stretching

// METHOD

  1. 01

    **Clean**: rinse the mussels under cold running water, scrub off any grit and pull away the beards. Discard any that are cracked, or that stay open when tapped sharply on the counter.

  2. 02

    Heat the olive oil in a large pot over medium heat. Add the fennel, shallot and celery and sweat gently for **4–5 minutes** — soft and aromatic, no browning at all. Browning here turns the finished butter muddy.

    Add the garlic, parsley stems and thyme and cook **30–60 seconds**, just until fragrant.

    Pour in the white wine and bring to a strong simmer.

  5. 05

    Add the mussels, cover, and cook **2–4 minutes**, shaking the pot once or twice. Lift them out as soon as they open — go by the mussels, not the clock, and pull the early openers out first if you can.

    Discard any mussel that stayed completely shut. Pick the meat from about two-thirds of them for the butter and keep the rest whole in their shells for the topping.

    **Strain the cooking liquor** through a fine sieve and reserve. Keep the mussel meat covered in the fridge while you make the butter.

    Char the chillies directly over a gas flame, on a barbecue, or under a very hot grill, turning, until they are **heavily blackened and blistered all over**.

    Do not be shy with the black — that char is the smoke in the finished butter.

    Pull off the stalks and rub away most, not all, of the blackened skin.

    Put the softened butter, 120 g mussel meat, burnt chillies, garlic, lime zest and a pinch of salt into a blender or small food processor.

    Blend until **completely smooth**, scraping down the sides.

    Add the reserved mussel liquor **one tablespoon at a time** until the butter is soft and spreadable but not loose. Too much liquor and it will run off the dough instead of soaking in.

    Taste and adjust the salt. The mussels and liquor are already salty, so season last.

    Get the oven as hot as it will go and preheat the steel or stone thoroughly (see the dough recipe for the full oven table).

    Stretch one dough ball by hand into a flatbread — **never roll it**, or the fermentation bubbles are gone.

    Spread a **generous** layer of the mussel butter over the surface, leaving a 1–2 cm border.

    Arrange the whole cooked mussels over the butter.

    Bake extremely hot until the dough is blistered and charred and the butter is bubbling — 60–90 seconds in a pizza oven, 4–7 minutes on a preheated steel in a domestic oven, finishing under the grill if needed.

    Finish with flaky sea salt and serve immediately. Repeat for the remaining three.

// NOTES

  • Dough: use the "Universal Flatbread Dough" recipe in Basics — Version A with a sourdough starter, Version B with yeast only. Either needs starting two days ahead.
  • What you are aiming for: a charred, blistered crust; melted mussel-chilli butter pooling into the dough; mussels still juicy, not rubbery; a quiet anise note from the fennel; smoky chilli heat behind it all.
  • Do not add cheese, tomato or mozzarella. The mussel butter is the sauce. Anything else buries it.
  • Timing for a dinner: dough two evenings before, mussels and butter the afternoon of, flatbreads at the very last minute. The butter is better made a few hours ahead so the flavours settle.
  • Leftover butter: it keeps 3 days in the fridge or 2 months frozen — roll it in parchment into a log and slice off coins. It is excellent on grilled fish, folded through pasta, or simply on hot toast.
  • Leftover liquor: freeze it. It is the base for a fish soup or a risotto.
  • Mussel yield: 1 kg of mussels gives roughly 250–300 g of picked meat. The butter needs 120 g, so there is plenty left to top all four breads.
  • Heat level: two long red chillies is warm, not fierce. Leave the seeds in or add a third for more.

// VARIATIONS

  • No gas flame: char the chillies in a dry cast-iron pan over the highest heat, pressing them down, until blackened on all sides.
  • Anchovy depth: blend 2 oil-packed anchovy fillets into the butter. It reads as savoury depth, not fish.
  • On the barbecue: bake the flatbreads directly on the grate over hot coals, butter side up, with the lid down.
  • Without the flatbread: serve the butter melted over a bowl of steamed mussels with bread on the side, or stir it through linguine with a splash of the liquor.
  • Clams or cockles: work exactly the same way and are arguably sweeter in the butter.
