// SUMMARY
Classic Argentinian chimichurri — a fresh, punchy herb sauce that's perfect with grilled meats. Simple, quick, incredibly good.
// INGREDIENTS

| 2 | parts Mexican oregano | |
| — Salt and pepper | ||
| — A little water | ||
| 1 | part garlic, finely chopped | |
| 3 | parts fresh parsley, finely chopped | |
| 3 | parts sunflower oil | |
| 1 | part red wine vinegar | |
// METHOD

**Spice base**: Mix aji molido, oregano, salt and pepper with a little water.

**Add herbs**: Stir in finely chopped garlic and parsley.

**Liquid**: Add sunflower oil and red wine vinegar, mix everything well.
// NOTES
- — Ratios are given in parts — e.g. 1 tbsp aji molido, 2 tbsp oregano, 3 tbsp parsley etc.
- — Best if left to rest for at least 30 minutes
- — Perfect with steak, asado, grilled vegetables
- — Aji molido is a mild Argentinian chili flake — substitute with Piment d'Espelette or mild paprika flakes
